Looking for a great, healthy sandwich to throw on the grill this summer? Here's a great way to make a burger-- replace your meat with a marinated, grilled mushroom.
1 tbsp. olive oil
2 tbsp. balsamic vinegar
2 tbsp. chopped fresh basil
1 tsp garlic powder
1/2 tsp oregano
1/2 tsp salt
1/8 tsp freshly ground black pepper
4 Portobello mushrooms, cleaned
4 oz. shredded pepper jack cheese
4 burger buns
Whisk the olive oil and vinegar together. Add the basil, garlic powder, oregano, salt and pepper.
Place the Portobello mushrooms in flat container and drizzle on the marinade. Toss gently to coat the mushrooms, cover with plastic wrap and put them on the counter to marinade for an hour.
Heat up your grill to medium high. Add the mushrooms and cook for about 10 to 12 minutes, flipping half-way through the cooking time.
Before removing the mushroom from the grill, add about 1 oz. of shredded cheese and let it melt. Open your burger buns and lay them, cut sides-down, on the grill for a minute to toast them lightly.
Place your buns on a plate and top each bottom bun with a mushroom and some shredded lettuce. Cover the burgers with the top bun.
